Every summer needs a signature treat. This watermelon gelato turns the season’s favorite fruit into a cool, creamy dessert that feels both nostalgic and unexpected. Light, refreshing, and packed with fresh melon flavor, it’s a sweet way to beat the heat.

Watermelon Gelato

Servings: 8

• 2 cups pureed watermelon
• 1/2 cup sugar
• 1 1/2 tablespoons cornstarch
• 1 cup fat-free half-and-half
• 3 tablespoons lemon juice
• 1/2 cup whipping cream

Blend all ingredients in a blender until smooth. Process in an ice cream maker according to the manufacturer’s instructions. Scoop into bowls and garnish with fresh mint.

For the best flavor and texture, enjoy this gelato fresh from the machine. If frozen, let it stand at room temperature for 10-15 minutes before serving to soften slightly and regain its creamy consistency.
