Winter is citrus season, and we’re giving grapefruit a big squeeze. When teamed with rosemary, it makes a bright and refreshing mocktail to help ring in a happy and healthy new year. 

Grapefruit-Rosemary Mocktail

Makes 2

Ingredients:

1 cup juice (from one large grapefruit) 

2 tablespoons rosemary simple syrup*

Sparkling water

Instructions:

Combine 1/2 cup of the fresh grapefruit juice and 1 tablespoon of the rosemary simple syrup in each of two glasses. Add ice and top off with sparkling water (about 1/2 cup). Garnish with a wedge of grapefruit and a sprig of rosemary. Adjust ingredient amounts to suit your taste. For a more spirited sip, add a splash of vodka or gin. 

*Combine 1 cup of water, 1 cup of granulated sugar, and 4 fresh rosemary sprigs in a small sauce pan. Bring to a boil, stirring until the sugar dissolves. Simmer for one minute. Remove from the heat and let sit for 30 minutes. Pour the syrup through a mesh strainer into a sterilized glass jar (removing the rosemary sprigs). Store in the refrigerator for up to one month.
