Whether picked from your garden or a farmers market bin, Utah's vine ripened tomatoes are at their seasonal peak. With so many options, the challenge is deciding how to enjoy them.


You've suffered for months consuming insipid red orbs barely passing as tomatoes. Now it's the end of summer and time to make up for your forbearance of these bland, off season stand ins. Across Utah, bushels of sweet, vine-ripened tomatoes abundantly await you and your pent up cravings. Whether you're dining in or on the town, set your culinary sights on fresh, flavor-packed tomatoes while they're ripe for the picking.

Meditrina's Tomato and Watermelon Salad

Juicy, sweet and savory at the same time, this salad is perfect for a grilled menu.

Ingredients:

8 cups watermelon cubes
6 cups tomato chunks (about 3 lbs. tomatoes)
5 cups washed arugula
6 oz. feta cheese, broken into chunks

Meditrina Maple Champagne Vinaigrette

1/4 cup champagne vinegar
14 cup white wine vinegar
1/2 cup maple syrup
2 tsp. chopped fresh thyme
2 tsp. salt
1/2 tsp. fresh ground black pepper
3/4 cup to 1 cup canola oil

Instructions:

For the dressing, whisk all of the ingredients except the oil together until the salt dissolves. Add the oil gradually. Vinegars will vary, so add more maple syrup to the recipe if desired.

Toss gently with arugula leaves, watermelon, tomato chunks and feta cheese. Serves 5 to 8.

Tomato Days Dine-Around - September 1-30, 2013

Help support Wasatch Community Gardens and local restaurants and growers by enjoying fresh, delicious heirloom tomato dishes. Each participating restaurant will donate a portion of the proceeds from their Tomato Days dish to Wasatch Community Gardens.

The list of partcipating restaurants continues to grow and currently includes: Avenues Bistro, The Copper Onion, Faustina, Finca, Les Madeleines, Meditrina, Caffe Molise, Caffe Niche, Pago, Pallet, Plum Alley, Sage's Cafe, The Tin Angel Cafe, The Wild Grape Bistro, and Zy. 

Tomato Sandwich Party - Saturday, September 7

Taste your first heirloom tomato or discover a new favorite at Wasatch Community Garden's harvest celebration. The event features live music, activities for kids, the Eat Local Challenge kick-off, local food samples, and, of course, delicious heirloom tomato sandwiches - all for FREE.

Fall Plant Sale - Saturday, September 7

This is one of very few opportunities in the valley to purchase vegetable starts and seeds that can produce crops into the early winter months. Be the only one in your neighborhood harvesting from your garden after the frost. Wastach Community Gardens will be featuring organically grown, heirloom veggie seedlings from Kenyon Organics - perfect for planting this fall.
